If you’re like me, you only buy carrots to force yourself to try a healthy alternative to pita chips for your hummus. OR to gain some of the healthy benefits that carrots provide, like lower cholesterol levels and improved vision (so they say!).
But if you’re truly like me, you get sick of the taste of carrots pretty quickly, and with that, the taste of hummus also doesn’t even become enough to cover the taste of the carrot.
SO because I always find myself in this situation and I don’t want my carrots to go to waste (a whole $1 lost?! no way!), I decided that I needed to change the taste of the carrots myself.
Therefore, roasted carrots.
Read on to learn how to make this tastier-than-plain-carrots treat.
Here’s what you’ll need for the roasted carrots:
- Carrots (I used baby carrots)
- Spices (literally any spice will work, but I used a spicy chipotle seasoning, onion power & garlic power)
- Butter (or olive oil)
And everyone knows you can’t eat carrots (even roasted) without some type of sauce. So to save ourselves from any more hummus (because let’s be real, that gets old too), here’s what you’ll need for my Greek Yogurt Mustard Sauce:
- 1/4 cup Plain greek yogurt
- 1 tbsp Mustard (can use dijon or another flavor – I used Trader Joe’s garlic aioli mustard)
- 1/2 tsp Paprika
- 2 tsp hot sauce (amount & type of hot sauce is your choice – I highly recommend Kroger’s Jalapeno Tomatillo hot sauce)
& follow these steps:
- Preheat oven to 400 degrees F
- Cut your carrots into small pieces if they’re not already baby carrots – even if they are, cut the carrots into halves for crispier roasted carrots (basically like a carrot fry!)
- Melt butter in a bowl (I used about 2 tbsp but the amount is your call). Or simply pour some olive oil in a bowl if you’re not using butter
- Toss carrots in the bowl with the butter and sprinkle with other spices before mixing everything together
- Make sure carrots are well soaked with butter and spices before placing in oven for 30 minutes
- While the carrots are baking, start mixing the yogurt, mustard, paprika and hot sauce together for the sauce. Place in refrigerator once ingredients are well-mixed
- After 30 minutes, remove carrots from the oven. Let cool slightly and enjoy warm with cooled greek yogurt mustard sauce
Much better than just regular old carrots, right?
